A recent spate of questions has resulted in the following clarification of
The environmental impact of the palm oil used by Lyme Regis Foods:

The organic palm oil used in Lyme Regis products comes from oil palms grown by the Tequendema farmer co-operatives, which are managed by the Davila family in Santa Marta, North Colombia. Recently this operation was independently assessed by Dr Steve Jennings of ProForest. The report he produced makes the following points:

  1. Tequendema has an Environmental Management Plan designed to minimalise environmental impact
  2. The Tequendema core plantation is managed under organic regulations to a very high standard
  3. Tequendema argue that this by itself has a beneficial impact on biodiversity and have conducted some research on insect biodiversity that supports this assumption
  4. There is no evidence that the Tequendema plantation has been established on deforested land. There is also no evidence that the use of the land for palm oil (production) is leading to increased pressure to clear forest for other uses.

Q. Does this product contain Oil Glaze?
A. None of the products we make at Lyme Regis Fine Foods contain oil glaze.

Q. What is the Lecithin?
A. The lecithin used in our range is a totally natural product that comes from soya beans. Used in chocolate as a surface-active agent to improve its flow properties.

Q. What is the origin of glucose in this product?
A. In the organic and non-organic marzipan, the glucose syrup we use comes from wheat. In the course of producing the glucose syrup the wheat protein is removed, making this product gluten-free.

Q. Do any of your products contain e-numbers?
A. Our products do not contain artificial colours, flavours or sweetners, only natural ingredients. The only ingredients we use that carry an e-number are Pectin (E-440) which is a natural carbohydrate and E-322 which is Lecithin.

Q. What is Pectin?
A. Pectin is E-440, however it is a naturally occurring complex carbohydrate that occurs in ripe fruits and certain vegetables, and is used as gelling agent.

Q. What is Maltodextrin?
A. Maltodextrin is a complex carbohydrate made from natural corn starch. The human body takes time to digest maltodextrin, making it a good source of sustained energy.

Q. What is Glycerol?
A. Glycerol is a lipid (a type of fat) used to stop foods from drying out. Glycerol is produced by the human body. It occurs naturally in some plants.

Q. What type of palm oil do you use?
A. Our palm oil is extracted from the fruit of the palm and is unhydrogenated. There are no hydrogenated or transesterified fats in any of our products.

Q. Is this product suitable for diabetics?
A. Although we try and make our bars as healthy as possible, if you have a specific medical condition then we advise you to consult a doctor as to the suitability of our bars.

Q. What is a Calorie?
A. A calorie is the amount of heat required to raise 1g of water from 15�C from 16�C. Used as a measure of the energy value of foods. 1000 calories = 1 kilocalorie.

Q. What is Carbohydrate?
A. Carbohydrates are a group of complex compounds consisting of carbon, hydrogen and oxygen. E.g. sugars, starch and cellulose, one of the main sources of energy in food.

Q. What is Dietary Fibre?
A. Dietry fibre is the part of food that cannot be digested by the body. The presence of dietry fibre facilitates the process of food through the body where digestion and absorption can occur.

Q. What is Fat?
A. Fat is an organic substance containing fatty acids, glycerol and the elements carbon, hydrogen and oxygen. True fats are solid below 20�C.

Q. What is Lactose?
A. Lactose is a disaccharide composed of a glucose and a galactose molecule chemically combined. Also known as milk sugar.

Q. What is Protein?
A. Protein is a complex molecule comprised of many amino acids joined together.

Q. What is Sucrose?
A. Sucrose is Cane Sugar, it is a disaccharide composed of a molecule each of glucose and fructose.

Q. What is Fat Bloom?
A. Fat Bloom is the development of unstable fat crystals on the surface of chocolate.

Q. Does the actual chocolate contain hydrogenated oils?
A. No it doesn´t, the ingredients used are cocoa mass, cane sugar, cocoa butter, emulsifier: soya lecithin and vanilla, as shown on the new label.

Q. Are your products suitable for vegetarians?
A. Yes, all our products are suitable for vegetarians.
